250g flour
125ml water
250g butter
a pinch of salt
100g sugar
Cinnamon
Figs
Walnuts
1. Pre-heat the oven to 200°C.
2. Mix the flour, water, butter and salt and knead to make the pastry.
3. Sprinkle with sugar and roll into a rectangle, a quarter of an inch thick.
4. Grind the cinnamon, figs and walnuts together in a pestle and mortar.
5. Spread the mixture over the pastry rectangle.
6. Mark a line along the centre of the length of pastry and roll each of the long sides to the middle.
7. Sprinkle again with sugar.
8. Cut into slices.
9. Place on a baking tray and bake for 15–20 minutes, turning the slices halfway through.
10. Remove from the oven and leave to cool.
