Madeleine s au Citron
4 eggs, separated
250g granulated sugar
125g unsalted butter
125g plain flour
Grated rind of 1 lemon
1. Preheat the oven to 200°C.
2. Butter and flour a madeleine tin.
3. Beat together the sugar, butter and egg yolks.
4. In a different bowl, beat the whites until they form soft peaks.
5. Add the butter, sugar, lemon rind and egg yolk mixture to the egg whites a little at a time, alternating with 1 tablespoon of flour and the lemon zest.
6. Place a teaspoonful of the mixture into each mould.
7. Bake for ten to fifteen minutes, until risen and golden.
