* If you’re not a fan of spice, just skip the chipotle/cayenne in both the dough and the sugar mixture.

Cookie dough:

1 cup (2 sticks) room temperature butter

1 ⒈/⒉ cup sugar

2 large eggs

1 tsp. vanilla

2 ⒈/⒋ cups all-purpose flour or 1:1 gluten-free flour

⒈/⒉ cup cocoa powder

2 tsp. cream of tartar

1 tsp. baking soda

⒈/⒋ tsp. salt

⒈/⒋ tsp. ground chipotle powder OR red cayenne pepper

Sugar mixture:

⒈/⒋ c. sugar

⒈/⒋ tsp. ground chipotle powder OR red cayenne pepper

1 tsp. cinnamon

Preheat oven to 400℉

To make the dough: cream together butter and sugar until fluffy. Add eggs and vanilla and beat. Sift together all dry ingredients, then mix while gradually adding to the dough.

To make sugar mixture: combine all three ingredients.

Using a cookie scoop or spoon, form balls of dough and roll in the sugar mixture. Bake 3 inches apart on a parchment-lined baking sheet for 10 minutes. Let cookies cool on sheet for 3 minutes before transferring them to a wire rack. Makes about 4 dozen cookies.
