VANESSA’S LEMON DRIZZLE CAKE RECIPE

Line a loaf tin with greaseproof paper, then spoon in the mixture and level the top with a spatula.

Spanish lemons are particularly good for this!

Prick the warm cake all over with a fork, then pour over the drizzle – the juice will sink into the holes and the sugar will form a lovely, crisp topping.

Leave in the tin until completely cool, then remove and serve.

Don’t wait to have a slice – it will be eaten up in double quick time!
