INGREDIENTS

· 2 fluid ounces aged Caribbean rum (dark or gold)

· 1.5 fluid ounces fresh passionfruit pulp or 100% passionfruit juice

· 0.8 fluid ounces fresh lime juice

· 1 fluid ounces cold coconut water

· 0.5 fluid ounces honey syrup (equal parts honey and warm water, cooled)

· 2 pinch Angostura bitters

· 1 pinch smoked sea salt, for the rim

· 1 cups ice

· 1 passionfruit half or lime wheel, to garnish

STEPS

1. Salt the rim: Run a lime wedge around the rim of a rocks glass or wide coupe. Dip lightly in 1 pinch smoked sea salt, for the rim — just the rim, not a thick crust.

2. Combine: Add 2 fluid ounces aged Caribbean rum (dark or gold), 1.

5 fluid ounces fresh passionfruit pulp or 100% passionfruit juice, 0.

8 fluid ounces fresh lime juice, 1 fluid ounces cold coconut water, 0.

5 fluid ounces honey syrup (equal parts honey and warm water, cooled), and 2 pinch Angostura bitters to a cocktail shaker with 1 cups ice.

3. Shake: Shake hard for 15 seconds until well combined and cold.

4. Strain: Double-strain over fresh ice into your prepared glass.

5. Garnish and serve: Top with 1 passionfruit half or lime wheel, to garnish and serve immediately.
