Epilogue 2 Recipe
Peanut Butter Pupcakes Recipe
When I was writing A Fool for April, I wanted the pupcakes mentioned in the story to be something real that you could actually make for your own furry friends, so I’ve included this dog-safe recipe as a little bonus for you!
The most important thing to remember: always check that your ingredients are xylitol-free. It’s an artificial sweetener that’s extremely toxic to dogs, even in tiny amounts.
These treats should be given in moderation—one pupcake is plenty for most dogs. And as always, if your dog has any dietary restrictions or allergies, check with your veterinarian before trying new treats.
Happy baking, and give your pup an extra scratch behind the ears for me!
INGREDIENTS
· 1 1/2 cup whole wheat flour
· ⒈/⒉ teaspoon baking soda
· 1/3 cup natural peanut butter
· 1/4 cup unsweetened applesauce
· 1/4 pumpkin puree
· 1 egg
· 1 tablespoon honey
· ⒈/⒉ cup plain Greek yogurt (for frosting)
· 2 tablespoons natural peanut butter for frosting
STEPS
1. Preheat oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with coconut oil.
2. Mix dry ingredients: In a medium bowl, whisk together whole wheat flour and baking soda until well combined.
3. Combine wet ingredients: In a separate large bowl, mix peanut butter, applesauce, pumpkin, egg, and honey until smooth and well blended.
4. Combine wet and dry: Gradually fold the dry ingredients into the wet ingredients, stirring until just combined. Don’t overmix. A few lumps are fine.
5. Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about 2/3 full.
6. Bake: Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
7. Cool completely: Remove from oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting. (Frosting warm cupcakes will cause the frosting to melt.)
8. Make frosting: While cupcakes cool, mix Greek yogurt and 2 tablespoons natural peanut butter for frosting together until smooth and creamy.
9. Frost and serve: Once pupcakes are completely cool, spread or pipe the yogurt frosting on top. Store in the refrigerator and serve within 3 days.
