Lower the heat and add the hot broth one ladleful at a time. Stir until the liquid has been absorbed. Do not add another ladleful until the rice requests it by opening its mouth – this is when the spoon you are using to stir the risotto opens up a clear wake behind itself as you draw it through the rice. Do not hurry and do not cease stirring! You must stay with the rice minute by minute. Keep adding liquid until the grains are al dente – not crunchy and not soft.
