John Wayne Casserole
I don’t know when I got this specific recipe, but I can recall growing up with a few different Bisquick casseroles in my childhood.
I specifically remember my dad making us one on nights that he would cook dinner for my brother and me.
Those nights often included the casserole and a movie rental from the local video store—usually a movie from when my dad was growing up.
Some of those movies are still my favorites to this day.
I don’t think there’s something a whole lot more American than a recipe including Bisquick, and I know there’s always a box in my cupboard.
Ingredients:
⒈/⒉ cup sour cream
⒈/⒉ cup mayonnaise
8 ounces sharp cheddar cheese, grated, divided
DIRECTIONS:
Preheat the oven to 350 degrees.
Grease a casserole dish—you want something that is around 9x13. This is not going to fit in an 8x8 dish.
In a bowl, combine the water and Bisquick.
Spread the mixture into the casserole dish.
In a skillet, brown the ground beef. Cook until brown and add the taco seasoning with the water indicated per the seasoning packet to put in with the beef.
Once done and the meat is cooked through, spread the meat mix on top of the biscuit mixture.
Spread the drained tomatoes on top of the beef.
In the skillet the beef was in, cook the bell pepper and onion until softened.
Sprinkle on top of the mixture in the casserole dish along with the can of green chiles.
Combine the sour cream, mayonnaise, and ⒈/⒉ the cheese.
Spread on top of everything in the dish.
Top with the rest of the cheese. Bake for 30 minutes.
Once out of the oven, let it rest for a few minutes.
NOTES:
I will admit there have been times I’ve used a can of Rotel instead of two separate cans of tomatoes and chiles.
I’ve also, in a pinch, used just sour cream and no mayonnaise, although both are better.
When I want to get this in the oven on a weeknight, I cook the onions and bell peppers with the ground beef and honestly don’t notice that much of a difference.
