Crème Brulée

250ml double cream

6 egg yolks

2 tablespoons of granulated sugar

4 tablespoons of brown sugar

1. Preheat the oven to 190°C.

2. Heat the cream.

3. Beat the yolks with the sugar and add the cream.

4. Pour the mixture into ramekins.

5. Pour some warm water into a roasting tin and place the ramekins in it. (The water should not be higher than the top of the ramekins.)

6. Bake in the oven for 30 minutes or until set.

7. Remove from the oven and leave to cool.

8. Sprinkle on a layer of brown sugar.

9. Brown the top with a blowtorch, or place under the grill.
