Asparagus Roll-Ups
Asparagus Roll-Ups
These are delicious little bites of yumminess.
One wouldn’t think that they would be because they use one of the most…
unappealing ingredients you can find in the grocery store—canned asparagus.
But trust me, they are. When my great-aunt would make these, they would always get eaten up fast. This recipe is pretty much as-is.
My great-aunt was a great cook but had to have a recipe to follow—winging it or adding extra of anything was not in her nature.
I may have tweaked other recipes of hers, but this one falls into the category of if it ain’t broke, don’t fix it.
INGREDIENTS:
Dash of Mayonnaise
DIRECTIONS:
Trim crusts off the slices of bread. Flatten bread with a rolling pin or bottle.
Blend cheeses and egg with a dash of mayonnaise.
Spread on bread. Place the asparagus spear on the bread and cut off the excess asparagus.
Roll up and slice into bite-size portions (each piece in half is good).
Freeze, and when you want to use, preheat the oven to 400 degrees and bake for 15-20 minutes or until golden brown.
NOTES:
If you use the brand with the giant on it, you can usually cut the asparagus in half and use one piece per piece of bread. You only need one can that way.
