Corn Fritters
INGREDIENTS:
? tsp salt
DIRECTIONS:
Mix all ingredients together.
Spray a frying or cast-iron pan with nonstick spray or oil.
Spoon mixture into pancake-like shapes in a pan.
Cook until brown on the outside and done throughout.
Best served with melted butter on top.
This makes enough for four people-though if I was making it for my husband and father-in-law, it made enough for them and I would have to double it for the rest of the family.
NOTES:
I have used yellow and white corn interchangeably, and both work fine.
My father-in-law swore these had to be served with fried pork chops and stewed tomatoes. I’ve served them with other foods, and they still get eaten up just as fast.
