Lima Beans with Water Chestnuts

I’m not a fan of lima beans. Never have been.

This recipe is the only time I would eat them as a kid, and I think it’s because of the water chestnuts.

That or because my nana is the one who would make this dish, and I knew she would have a delicious dessert.

One needed to at least eat some of the vegetables to get dessert.

Now, did I know at the time that my mom hid some of her vegetables in her napkin?

Not at all. Though this is one of the few recipes she did eat when it came to vegetables. Do I sound bitter? Maybe a little.

This serves at least four people, if not more depending on how many like to eat their vegetables.

INGREDIENTS:

1 10-ounce package of frozen baby lima beans

⒈/⒉ cup sliced water chestnuts

2 TBSP wine vinegar (red or white)

2 tsp dill seed

⒈/⒉ tsp salt

⒈/⒋ tsp pepper

⒈/⒋ cup butter

⒈/⒋ tsp MSG

Pimento strips for garnish

DIRECTIONS:

Cook lima beans per the directions on the package. Drain and combine with water chestnuts. Heat the remaining ingredients thoroughly in a small saucepan. Toss with beans. Serve hot and garnish with pimento strips.

NOTES:

My nana crossed off the MSG, and I don’t think I ever remember her adding it. I also don’t remember the pimento strips, but they would probably be good. So would more water chestnuts
