Cherry Coke Salad

INGREDIENTS:

Dissolve Jello in hot juice.

Add Coke and cool.

When cool and slightly thickened, add in cherries, pineapple, and nuts.

Place in mold and put in the fridge to set. You don’t have to use a mold-you can just use a pan, as we usually just served it in the pan. If you do use a mold, I would probably spray it with non-stick spray.

Stir carefully when partially congealed if the fruit settles on the bottom.

If the fruit liquid does not come to 2 cups (it usually does), you can add water or more Coke to equal the amount.

I would say this makes enough for 6-8 people.

NOTES:

This salad was from before Cherry Coke was a thing. Since it’s been out, we have alternated between the two.

Yes, this is a very seventies “salad,” but it’s really yummy. We served it as a side dish at dinner, but it would be a good dessert, too.
