Cake Mix Cookies

This is a recipe that you can personalize in just about any way.

I love that they are so easy to make and don’t require a lot of measuring and ingredients.

You’ll notice there are not a lot of traditionally baked treats in this book.

There’s a good reason for that. I’m not good at following directions and being exact.

Baking requires precise measurements. Cooking doesn’t.

I can throw in more garlic if my heart desires, but for baking, I can’t always alter things on a whim.

This recipe lets me be creative and still get some yummy cookies in the end.

INGREDIENTS:

⒈/⒉ cup Vegetable oil

2 large eggs

DIRECTIONS:

Preheat oven to 350 degrees.

Mix ingredients together. Add any mix-ins you like, and then chill in the fridge for 30 minutes.

To keep from sticking, cook cookies on parchment paper. Roll dough into balls and bake for 8-10 minutes or until they are set.

NOTES:

Some of my favorite combinations are:

Chocolate cake mix with either chocolate chips or peanut butter chips mixed in.

Yellow cake mix formed into balls, and then rolled in cinnamon and sugar to create delicious snickerdoodle-like cookies.

Spice cake mix with chopped pecans and shredded carrots to create carrot cake cookies.

Chocolate cake mix with crushed-up candy canes for a minty holiday treat.

Lemon cake mix with dried cranberries added in is great around spring.

I’ve even used the holiday Funfetti mix to make the cookies and iced them with sprinkles to mimic those soft, iced cookies you can get in the grocery store.
