Ingredients
1 1/4 cups butter or margarine, melted
1/2 cup baking cocoa
5 eggs, well beaten
2 1/2 cups flour
2 1/2 cups sugar
1 tablespoon mint extract
1 1/2 pounds powdered sugar
1/4 cup butter or margarine
1 teaspoon mint extract
milk (as needed)
food coloring – green or red
1 cup bitter-sweet or semi-sweet chocolate chips
1/2 cup butte r
Directions
Brownie Layer – Preheat oven to 350 degrees. Stir the first six ingredients together and pour into a greased 12” x 18” pan. Bake about 25 minutes until just done. Do not over-bake. Remove from oven and cool.
Mint Icing Layer – Combine the next five ingredients to make powdered sugar icing, using milk as needed to until consistency is thick, but spreadable. Tint to desired color with green or red food coloring. Spread evenly on cooled brownies. Place in refrigerator to cool.
Chocolate Glaze – Place chocolate chips in bowl and microwave for 1-2 minutes until chips are soft all the way through, but not melted. Add butter and stir until smooth. If not completely melted, microwave a few more seconds until pourable consistency. Pour glaze over cold, iced brownies and spread with silicone spatula. Shake and tilt the pan to even the glaze. Let glaze harden in a cool place.
To serve, cut into 2-inch squares with a wet knife to keep the glaze from cracking. If desired, store pan in freezer and serve frozen. (This was our favorite way to eat them every Christmas!)
