Fig and Feta Cookies

I ngredients:

1 1/2 cups of figs

Approx. 1 cup of milk( enough to cover figs)

Approx. 2 1/2 cups of flour

2 egg yolks

1/4 cup sugar

.84 cup(or 210 grams) of sour cream

1 Tbsp. baking powder

1.2 tsp. vanilla

Zest of an orange OR lemon

2 sticks of salted butter- softened

Feta cheese- Goats(saltier) or Cow's(more mild salt)

Instructions:

Chop 1 1/2 cups of fig(about 13 figs). Take stem out.

Add figs to sauce pan and cover with milk. On low heat, cook figs & milk until figs are soft/jelly like.

In a large bowl, add 2 cups of flour(you can add more if you need it).

Make a divot in the center and add two egg yolks, sugar, sour cream, baking powder, vanilla, orange or lemon zest, 2 sticks of butter(fold into mix ONE at a time). Mix with spatula.

Flour a surface and mix with hand. If dough is too wet or sticky, add more flour until the dough is similar to cookie dough.

Rest dough for 45mins.(This dough does not rise)

Roll dough into a log. Cut in half, then cut those halves in half. You should have four equal sections. Roll them into balls.

In a separate bowl, mix figs with about 1/2 cup of feta. If you like more, add more!

Roll dough with pin until it is about 1/4 in. thick. Use a round plate to make dough a perfect circle.

Cut into 8 equal pieces, score the narrow part of the triangles with three small slits.

Scoop small balls of fig/feta mixture onto dough.

Roll halfway, pinch the sides, and finish rolling.

On a baking sheet lined with parchment paper, place cookies 1/4 in. apart.

Cook at 400 degrees for 15-18 mins or until very lightly brown. * Adjust accordingly for YOUR oven *

Let cool for 5 mins. Finish by rolling them in powdered sugar.
